Hand picked and sorted, machine crushed and de-stemed. Cold soaked for 6 days, Top-Gun fermentation Syrah Yeast for 8 days at 81 degrees max.. Pressed directly to tank then clean racked into barrels the next day.
This is an OUTSTANDING Vintage from Felix Addor's vineyard. The wine is showing extremely well and is one of the most impressive vintages that I have seen in my 20 short years of making wine. The balance of this wine is classic and will age for many, many years.
